Liés généralement à la fête chrétienne de Mardi gras, les carnavals sont un type de fête relativement répandu en Europe et en Amérique du Sud.

On fait dériver le mot Carnaval de carn (pour caro, chair) et avaler, parce que l’on mange beaucoup de chair pendant le Carnaval pour se dédommager de l’abstinence imposée pendant le Carême ; d’autres, avec plus de raison, font venir ce mot de caro vale, c’est-à-dire, adieu la chair.

Ils consistent généralement en une période où les habitants de la ville sortent déguisés (voire masqués ou bien maquillés) et se retrouvent pour chanter et danser dans les rues, éventuellement autour d’une parade.

D’après le calendrier religieux, le carnaval débute à l’Épiphanie (le 6 janvier), date qui marque la fin des fêtes de Noël et s’arrête le mardi gras, veille du début de la période de carême.

En Allemagne, le carnaval débute en principe le 11 novembre à 11 h 11 et se termine l’année suivante le mardi gras.

Les travestissements de tous genres, les bals nocturnes et masqués,
les promenades du Dimanche-Gras et du Mardi-Gras sont les principaux
amusements auxquels on se livre pendant le Carnaval. Le Carnaval de Venise
et en général ceux des pays méridionaux sont les plus célèbres et les
plus brillants. Cet usage semble être un reste des fêtes populaires
ancestrales, telles que les Bacchanales, les Lupercales, les Saturnales, la fête des Fous, de l’Ane, etc.
